Hello & welcome to our story.

This was a dream I had many years ago and has been discussed over drinks, many times over the years yet never came to anything . The big question people asked me is why aren’t you doing this for yourself which is a good question now I think about it.

There never really seemed a right time, or the right opportunity just never came around to make it happen. However now is as good a time as any, the question you have to ask yourself is will it ever be the right time to make that jump or even attempt it, so here we go……….

So lets introduce

Kirkcaldy’s newest restaurant venture

‘Oliver Twistz’ 

We want to open a restaurant within the town of Kirkcaldy, offering Kirkcaldy an exciting new brunch/lunch and Dinner hot spot. Somewhere you can come to enjoy great food, great company and be well taken care of.

So to help fund this venture we are going to be running a kickstarter page, where you will be able to purchase products and services in advance and then redeem them once we open our doors. This will allow us to gain the right venue and make it something truly different and unique. Somewhere that’s warm, inviting and entices you back time and time again.

Giving back


 We think it is important if people can help us realise the dream we should also give back too, which is why we are planning to host three fundraising dinners throughout the year, with all profits from the evening going to the chosen charity for that evening.

Introducing the Founders

So back in 2020, before covid hit, Oliver Twistz was the beginning of a private dining company. Providing dining experiences in the comfort of your own home or venue. I had done a few of these events, but as covid hit this business had to be put on the back burner.

Fast forward three years and working as head chef at the buffalo farm and overseeing The Bothy @ Boglily kitchen, where we have created something I believe which has gone from strength to strength over the past 4 years. The thing is I have always wanted to start my own business so the story begins.

It all started when I passed a restaurant with a for sale sign but had never been able to find the restaurant on the website it was supposed to be listed on. Then as if by fate the ad was in an email I had forgot I had signed up to. I thought to myself there is no harm in looking or finding out more so I did. Once I had seen it in person I knew I had to make the dream come true. Whether it was this venue or another one.

This was where things accelerated a bit, a quick call to Greg to see if he would be interested in helping me with renovations. There was a resounding yes, followed by, please tell me more about what you’re planning, from the chat on the phone and a coffee meeting we shook hands on a new partnership and Oliver Twistz was back on.

Hello, I’m Greg (Wallace),

the other half of the founding partners in Kirkcaldy’s newest venture ‘Oliver Twistz’

A little about myself and how this venture came around, in 2014 I opened a Kitchen Installation company specialising in Solid Surface Worktops (Signature Finishes), during this period we have fitted out many private houses and commercial properties all over Scotland. Some of these have been large restaurants and hotel projects which many of you will have visited.

These projects have given me a glimpse of what could be, and so when the chance to work with Jamie came around, I had to take the opportunity.

Jamie and I have known each other since we were 14 years old, when playing on opposing rugby teams. I made a regrettably terrible tackle on the smaller more nimble man and his coach removed his whole team until I was sent to the stands. Thankfully this didn’t end our friendship before it even started. We then ended up playing for Kirkcaldy Rugby Club together for many years, during this period Jamie was head chef at the Byre Theatre and I helped refit his bar/restaurant and I passed comment about why he wasn’t running his own place. This then happened on many occasions until our last conversation which resulted in us moving forward to get Oliver Twistz off the ground.

I am really excited to help move this forward and give Kirkcaldy a new unique restaurant, providing great high quality, locally sourced food.
